We’re going to a barbecue for Memorial Day, I get to cook because then no one has to worry about whether or not the meal really is safe for me to eat.
On the menu:
- Beef Kebabs I’ll probably just toss in whatever looks good for the marinade. I’ll try to write down the ingredients this time if you are interested.
- Barbecued Veggies Because it’s a pain in the ass to kebab the veggies, we’ll just use a barbecue basket. It’ll probably be a mixture of: red onions, bell peppers (probably any color but green), whole garlic cloves, summer squash, zucchini, and apples. It’s amazing how good barbecued apples are.
- Garlic Fries a Cook’s illustrated recipe. Sounds wonderful!
- Fruit Salad An old standby, popular because there’s no cooking, it’s fairly light if we use yoghurt and honey instead of something like cool whip, and not filling like a cake would be.
What’s also nice is that most of this food just needs to be chopped and it’s ready for cooking. It’s easy to do communally, and hopefully should go fairly fast.
I’ll post recipes if you are interested.
