GF Chocolate Mug Cake

Perhaps you’ve read about this dangerous concoction, perhaps not. I’d be surprised if you haven’t, personally I’ve received this recipe from at least 5 different people. I’ve avoided it since I wasn’t sure if it would work with gluten free flours. It does! The cake raises because of the egg, no other leaveners needed.
Gluten Free Chocolate Mug Cake
4 T gluten free flour blend (your favorite)
4 T granulated sugar
2 T cocoa powder
1 egg
3 T. milk
1 T oil
splash of vanilla
3 T chocolate chips (optional)In a microwave safe coffee mug, combine the dry ingredients, mixing well with a fork. Add egg and mix thoroughly. Pour in milk, oil, and vanilla and mix well. Mix in chocolate chips (if using). Put mug in microwave and cook for 3 min. @ 1000 watts. cake may rise over the top of the mug during the cooking process; this is okay. When finished, carefully remove from microwave and cool slightly. Transfer to a small plate, if desired, to serve. You may also top with the jam, syrup, or icing of your choice. Makes 1 VERY generous serving.
The original recipe calls for 3 tablespoons instead of one tablespoon of oil. I know it sounds high, but you can’t go below 1 tablespoon without adversely affecting the texture. Without any oil, the cake is tough. I’d imagine that applesauce woudl be a really tasty and healthy alternative, if you have any. Then I would put in 3 tablespoons.
Make sure to use one of your large mugs, a 6 ounce mug will not cut it.
